Malloreddus with Prawn Sauce and AubergineServes 4. Preparation 15minsIngredients400g malloreddus (small Sardinian gnocchi shaped pasta) or any pasta shape 1 tbsp olive oil 250g raw king prawns or crayfish, shelled and deveined 1 jar Sacla' Char-grilled Aubergine and Parmesan Stir-through Sauce Handful of fresh thyme MethodCook the pasta in a large pan of lightly salted boiling water according to the instructions on the packet Heat the olive oil in a frying pan, add the prawns, or crayfish, and cook for 1-2 minutes, then add the stir-through sauce and heat well. When the pasta is cooked, remove from the pan and add to the sauce. Stir-through and serve straight into warm bowls with a sprinkle of fresh thyme |
