Cherry Tomato & Basil and a Hot Sausage Pot

Serves 2. Preparation 30mins


Ingredients


1 tbsp olive oil
8 spicy sausages
1 onion, roughly chopped
2 garlic cloves, chopped
2 large capsicums
Jar of Saclą Cherry Tomato & Basil Pasta Sauce
6-8 small new potatoes, cut larger ones in half
Pinch of fresh thyme leaves or rosemary stalks
500ml vegetable stock
½ bag baby spinach or rocket

Method


Heat the olive oil in a large frying pan and add the sausages, the capsicums cut in slices, onion and garlic. Cook until sausages are browned then add everything to a large saucepan. Stir the Saclą cherry tomato & basil into the saucepan. Add the potatoes, and herbs and pour in the stock. Bring to the boil, then simmer for 20-25 mins. Add a little more stock if needed. Stir through the spinach or rocket and cook until wilted. Remove from heat, season to taste and serve with some warm crusty bread.
