Pasta Salad with Tomatoes & BasilServes 4. Preparation 15minsIngredients1 ball of Mozzarella, preferably buffalo, cut into cubes 1/2 a garlic clove, very finely chopped 1 dried chilli 2 tbsp of capers 4 anchovy fillets, finely chopped (optional) 3 tbsp of extra virgin olive oil 400g of penne 350g jar of Sacla' Whole Cherry Tomato and Basil sauce 20 fresh basil leaves, torn sea salt and freshly ground black pepper MethodIn a bowl mix the Mozzarella cubes, garlic, pepper, chilli, capers, anchovies, and 1 tablespoon of olive oil. Do it with a light touch to keep the mozzarella in good shape. Leave it to infuse for at least half an hour, then remove the chilli. Cook the penne in plenty of boiling water. Drain the pasta and dress with the remaining olive oil and Sacla` Whole Cherry Tomato and Basil sauce. Mix thoroughly and set aside to cool. Add the infused Mozzarella mixture, let it go all gooey and melted and serve the pasta garnished with torn basil leaves. The whole thing looks and smells as good as it tastes. |
