Penne Pasta salad in a vegetable & Tomato Dressing
Serves 4. Preparation 20minsIngredients350g penne 200g fresh red & yellow capsicums 200g of raw, seasonal vegetables 1 jar Saclą Whole Cherry Tomato and Olives large bunch fresh basil leaves, roughly torn MethodBring a large pan of salted water to the boil and cook the pasta according to the packet instructions. Clean and cut the capsicums and the other fresh vegetables in small chunks. Drain the pasta well and refresh under running cold water. Transfer to a large serving bowl and stir through the red & yellow capsicum, the other vegetables and the jar of Saclą Whole Cherry Tomato & Olives, garnish with the basil leaves. Season well with plenty of ground black pepper and serve immediately. |
