Tuscana Chick Pea Stew

Serves 4. Preparation 15mins


Ingredients


organic vegetables

Onion/shallots/garlic crushed
courgette
red /yellow peppers
butternut squash
sweet potato
baby corn
mangetout
can of organic chick peas
jar of Sacla' Whole cherry tomatoes pasta sauce or tomato stir through sauce or any of the tomato pesto's or sauces, chilli one if you like spice
organic vegetarian stock/boullion

Method


Chop all vegetables into attractive chunks
Fry gently in olive oil the onions/shallots/garlic/peppers etc
Add enough stock dissolved in boiling water to the vegetables and cook to soften.
Add the Sacla' sauce and chick peas and warm through not overcooking to preserve goodness and crispness.
Serve with brown rice, cous cous or garlic bread to soak up the lovely tomato sauce. Can sprinkle with olives if desired
