Penne, Potatoes, Rocket & Pesto
Serves 2. Preparation 20minsIngredients200g small new potatoes, peeled or scraped 150g penne pasta 4 tablespoons Saclą Classic Pesto Sea salt and freshly ground black pepper A small handful rocket leaves Freshly grated parmesan cheese MethodBoil a medium-sized pan of salted water for the penne and cook the pasta following package instructions. Meanwhile pop the potatoes in a small pan, cover with cold water, add a sprinkle of salt, bring to the boil and simmer for 10-12 minutes or until tender. Drain and slice them each 4 ways. Put in a bowl and season. When ready, drain the pasta, add to the potatoes, spoon over the Saclą Classic Pesto and lightly toss everything together. Share between 2 warm pasta bowls, scatter over the fresh parmesan and the rocket leaves and serve. |
