Lamb Steaks with Tomato and Olive Stir-through

Serves 4. Preparation 15-30mins


Ingredients


4 lamb steaks
400g cherry tomatoes
150ml dry white wine
100g black olives
2 tbsp olive oil
1/2 jar Sacla' Tomato and Olive Stir-through
2 tsp Oregano
Handful fresh parsley

Method


Preheat the oven to 200°C, Gas Mark 6.
Heat the oil in a large roasting tin over the hob and brown off each lamb steak, approx 1 minute on either side.
Add the onion and oregano. Stir the wine with the Sacla' Tomato and Olive stir-through and add to the pan.
Scatter the cherry tomatoes and olives around the tin.
Place in the oven for 15 minutes until the lamb is cooked. Serve scattered with fresh parsley.
