Mediterranean kebabs with olive, Tomato and Honey GlazeServes 2. Preparation 15-30minsIngredients6 good quality pork sausages 1 onion, peeled & sliced 1 red & 1 yellow pepper, de-seeded & sliced 1 courgette, sliced 190g jar of Sacla' Olive and Tomato Stir Through sauce 2 tbsp of runny honey sea salt and freshly ground black pepper 1 tbsp of flat-leaf parsley, finely chopped 2 skewers MethodPreheat the grill or fire up BBQ. Cut each sausage into three pieces and thread them with the prepared vegetables onto the two skewers. Now mix the Sacla' Olive and Tomato sauce and the honey together and brush generously over the kebabs. The honey creates that gorgeous blackened glaze when you've grilled it. Grill the kebabs for about 10 minutes each side, or until cooked through. Baste occasionally, using the olive and tomato sauce as the secret weapon. Serve on a plump bed of couscous with a green salad and garnish each plate with flat-leaf parsley. The colours are amazing and so are the flavours. |
