Sun Dried Tomato & Garlic Pizza

Serves 4. Preparation 30-45mins


Ingredients


1 jar Sacla' Sun-Dried Tomato and Garlic Stir Through
1 yellow pepper, deseeded and sliced
1 courgette, sliced
1 red onion, sliced
225g / 8oz self-raising flour
2 tbsp plus extra for drizzle, olive oil
50g / 2oz cheddar cheese, grated

Method


Preheat the oven to 220°C, Gas Mark 7.
Place the pepper, courgette and onion on a baking tray and dizzle with oil. Roast in the oven for 20 minutes.
Meanwhile preheat the grill to medium.
In a bowl mix the flour and oil and 5 tbsp of water to form the dough.
Fold over the dough continually and then roll out onto a flat floured surface into a circle.
Fry the pizza base in a pan for 5 minutes on each side or until golden brown.
Spread the Sacla' Sun-Dried Tomato and Garlic Stir Through over the base and add the vegetables. Sprinkle over the cheddar cheese on top.
Place under the grill until the cheese has melted, then remove and serve.
